
Use best available eggs (farmer’s market? Friend with chickens?) Make them by steaming them.
-heat an inch of water in a small pot with a lid (this doesn’t take long)
-put your egg(s) in (a steamer basket is nice but you can put them right into the pot if you don’t have one - just be gentle.
-cook about 7 min for cooked whites and a runny yolk; adjust time to taste.
-toast, fruit, etc on the side if you like. Regular s&p is great but things like everything bagel topping or furikake can also be employed to good effect.
